Harvested from the 3 - 5 metre surf zone, the Diamond Shell has an incredibly high meat-to-shell ratio.
With a mild sweet ocean flavour and a crisp texture, the Diamond Shell clam is ideally suited to a broad range of preparations.
The Diamond Shell shares a symbiotic relationship with a naturally occurring small Pea Crab. On the rare occasion, one of these crabs may remain in the clam and can be eaten or discarded.
The clams are a native inhabitant of the turbulent, nutrient rich surf zone, requiring a unique harvesting method developed over 20 years of extensive development by Cloudy Bay Clams. The harvesting method, regarded as the most sustainable and environmentally friendly method in the world, has minimal effect on both the environment and the clams.
The clams have been purged of sand, graded and quickly frozen to preserve the quality and integrity of the clams unique flavours and textures.
